Ett recept på lammsylta från Klockargården , kommer ur Hemmets veckotidnings julnummer 1975
2 kg lammbog
2 lit vatten
4 medelst lökar
2-3 morötter
1 bit selleri
20 vitpepparkorn
7-8 kryddpepparkorn
2 msk salt
1 msk rosmarin
2 röda paprikor
10-12 gröna oliver
7-8 blad gelatin
Blanchera kötttet om ni önskar syltan klar . Hetta upp det till kokpunkten i lätt saltat vatten . Häll sedan av vattnet och skjölj köttet i kallt vatten .
Lägg köttet i nytt vatten koka och skumma . Tillsätt kryddorna lök och morötter och sellerin . Koka tills köttet är mjukt .
Ta upp och låt det svalna . Skär det i "pytt-i-panna"kuber och lägg dem i kastrull . Sila över spadet och låt det koka upp . Ta den av spisen och låt stå ca ½ timme .
Skumma av fettet . Tillsätt strimlad paprika och de skivade oliverna . Koka upp det hela . Rör i gelatinet (som blötlagts i vatten och kramats ur ) Rör tills gelatinet lösts . Häll massan i en form-ar . skjölda i kallt vatten , och ställ dem att stelna på sval plats .
