Har hamnat i diskussion med min fader om hur man gör riktig mesost. Vi är båda överens om att den mesosten jag gör inte är "riktig" då den kokas på vassle från komjölk (har inga getter i min närhet men däremot gott om kor).
Frågan är hur gör man riktig mesost och på vad?

Mese på komjölk är svårt, då kokningen är energikrävande. Fjällbrynt etc har energisparande indunstare, och gör sina produkter på komjölk. Därför kan man hålla låga priser, och det gör mesekok på komjölk konkurrensmässigt svårt.
Getmjölk som råvara ger andra möjligheter.
Man kan tillsätta 5 - 10 % mjölk till vasslen, så blir mesesmaken fylligare.
Meseprodukter är mese, messmör och mesost. Vattenhalten (och därav koktiden) skiljer. Mesosten lufttorkas ochså för att bli hylingsbar.
