Hej
jag vet att det finns mängder av trådar om följande, men det är lite just därför jag behöver hjälp.
saken är den att jag ska testa röka vilt och lamm i min Bradleysmoker. Jag har köpt nitritsalt på en chark. Jag tänkte sprutsalta och låta köttet ligga i utjämningslag. Saken är den att mannen i charken sa att när de saltar för rökning av vilt har de 2 kg salt till 30 liter vatten, alltså en salthalt på endast 6,7 %. Det jag läst mig till på nätet är att den bör vara 10-13%.
Och han sa att de har köttet ett dygn i utjämningslag, vilket jag tycker låter kort på t.ex. ett rådjurslår.
Har han rätt eller fel? (jag trodde jag visste tills jag bad honom om råd...)
